Episode 17: From Ice Cream to Mayo with Special Guest Carolyn Hennessy!

Max and Maks are back and this week they welcome the NYE hostess with the mostest, Carolyn Hennessy!

The gang catches up on how they’ve been, Maks and Carolyn discuss different puppy parenting techniques, and Max shares a food-filled long weekend he spent with his fam. Then, the gang launches into a food/recipe discussion about oysters, mayo, ice cream, and everything in between.

Later, the gang settles in for a rousing game of 20 Questions AKA 20Q (huge shout out to ⁠The Bread Basket on Instagram⁠ for giving us the idea and be sure to give them a follow to see the masters at work)! It doesn’t matter who got stumped or tripped up on what may or may not be considered a “tool,” but it’s the friends we made along the way.

Now let’s get to the tips –

  1. For best results, it’s important to add your ingredients in this order before blending: whole egg, mustard of choice, lemon juice, vinegar of choice, any seasonings/salt and pepper, then oil.
  2. Make sure to start with the head of your immersion blender all the way at the bottom of your cup/vessel. Turn it on first at the lowest setting and DO NOT MOVE. Wait for the emulsion to form, and then, and only then, start to slowly lift the blender head to incorporate.
  3. For Roasted Jalapeño Mayo: Roast 2 peppers (seeds optional) per recipe shown in the video. You can add them into your mayo at any point, but I’ve found it’s easier to make the mayo first, then blend them in after.
  4. For Old Bay-O: Add a metric shit ton (yes, that is an official measurement) of Old Bay when you add your seasonings before blending.
  5. Other things to try: Play around with your ratios of vinegar to lemon juice, add sugar if you’d like, try different neutral oils or a mix of oils, mess around with different seasonings, try other add-ins like tomato paste, harissa, or anything you want! GET WILD BECAUSE YOU MADE HOMEMADE MAYO IN A MINUTE!!!
